Ingredients:
For the Varuval Base:
- 500g chicken/mutton/fish/potatoes/brinjal (as per choice)
- 2 tbsp oil
- 1 onion (sliced)
- 1 tomato (chopped)
- 2-3 green chilies (slit)
- 1 tbsp ginger-garlic paste
- 1 sprig curry leaves
- 1/2 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1 tsp garam masala
- 1 tbsp black pepper powder
- 1 tbsp lemon juice
- Salt to taste
- Water (as needed)
- Coriander leaves for garnish
Whole Spices:
- 1 tsp fennel seeds
- 1 cinnamon stick
- 2 cloves
- 1 bay leaf
- 2 dried red chilies
Instructions:
Step 1: Marinate the Meat/Vegetables
- In a bowl, mix the meat or vegetables with turmeric, red chili powder, coriander powder, salt, and lemon juice.
- Let it marinate for at least 30 minutes.
Step 2: Prepare the Tempering
- Heat oil in a pan, add fennel seeds, cinnamon, cloves, bay leaf, and dried red chilies. Sauté for a few seconds.
- Add onions and green chilies. Sauté until onions turn golden brown.
- Add ginger-garlic paste and cook until the raw smell disappears.
Step 3: Cook the Base
- Add tomatoes and cook until soft.
- Mix in the marinated meat or vegetables and cook on medium heat.
- Add garam masala and black pepper powder. Stir well.
Step 4: Fry Until Crisp
- Cook uncovered until the moisture evaporates, and the dish turns crispy and well-roasted.
- Stir occasionally to prevent burning.
Step 5: Garnish & Serve
- Garnish with fresh coriander leaves and serve hot with rice or roti.
