Varuval Recipes 🍖

Ingredients:

For the Varuval Base:

  • 500g chicken/mutton/fish/potatoes/brinjal (as per choice)
  • 2 tbsp oil
  • 1 onion (sliced)
  • 1 tomato (chopped)
  • 2-3 green chilies (slit)
  • 1 tbsp ginger-garlic paste
  • 1 sprig curry leaves
  • 1/2 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • 1 tbsp black pepper powder
  • 1 tbsp lemon juice
  • Salt to taste
  • Water (as needed)
  • Coriander leaves for garnish

Whole Spices:

  • 1 tsp fennel seeds
  • 1 cinnamon stick
  • 2 cloves
  • 1 bay leaf
  • 2 dried red chilies

Instructions:

Step 1: Marinate the Meat/Vegetables

  • In a bowl, mix the meat or vegetables with turmeric, red chili powder, coriander powder, salt, and lemon juice.
  • Let it marinate for at least 30 minutes.

Step 2: Prepare the Tempering

  • Heat oil in a pan, add fennel seeds, cinnamon, cloves, bay leaf, and dried red chilies. Sauté for a few seconds.
  • Add onions and green chilies. Sauté until onions turn golden brown.
  • Add ginger-garlic paste and cook until the raw smell disappears.

Step 3: Cook the Base

  • Add tomatoes and cook until soft.
  • Mix in the marinated meat or vegetables and cook on medium heat.
  • Add garam masala and black pepper powder. Stir well.

Step 4: Fry Until Crisp

  • Cook uncovered until the moisture evaporates, and the dish turns crispy and well-roasted.
  • Stir occasionally to prevent burning.

Step 5: Garnish & Serve

  • Garnish with fresh coriander leaves and serve hot with rice or roti.
