Ingredients:
For the Kulambu Base:
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 sprig curry leaves
- 1 onion (finely chopped)
- 2 tomatoes (pureed or finely chopped)
- 1 tbsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1 tsp garam masala
- 1 small lemon-sized tamarind (soaked in water & extract juice)
- 2 cups water
- Salt to taste
Whole Spices:
- 1 tsp fennel seeds
- 1 tsp fenugreek seeds
- 2-3 dried red chilies
- 1 small cinnamon stick
- 2 cloves
For Thickening (Optional):
- 2 tbsp coconut paste or coconut milk
Instructions:
Step 1: Prepare the Base
- Heat oil in a pan, add mustard seeds and let them splutter.
- Add cumin seeds, fennel seeds, fenugreek seeds, dried red chilies, cinnamon, and cloves. Sauté until aromatic.
- Add curry leaves and chopped onions. Sauté until golden brown.
Step 2: Cook the Spices
- Add ginger-garlic paste and sauté until raw smell disappears.
- Stir in tomato puree and cook until oil separates.
- Add turmeric, red chili powder, coriander powder, and garam masala. Mix well.
Step 3: Add Tamarind & Simmer
- Pour in tamarind extract and 2 cups of water. Stir well.
- Let the kulambu simmer for 10-15 minutes on low heat.
Step 4: Finish & Serve
- Add coconut paste or coconut milk for a rich texture (optional).
- Simmer for another 5 minutes until flavors blend well.
