Kulambu Recipes 🍲

Ingredients:

For the Kulambu Base:

  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 sprig curry leaves
  • 1 onion (finely chopped)
  • 2 tomatoes (pureed or finely chopped)
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • 1 small lemon-sized tamarind (soaked in water & extract juice)
  • 2 cups water
  • Salt to taste

Whole Spices:

  • 1 tsp fennel seeds
  • 1 tsp fenugreek seeds
  • 2-3 dried red chilies
  • 1 small cinnamon stick
  • 2 cloves

For Thickening (Optional):

  • 2 tbsp coconut paste or coconut milk

Instructions:

Step 1: Prepare the Base

  • Heat oil in a pan, add mustard seeds and let them splutter.
  • Add cumin seeds, fennel seeds, fenugreek seeds, dried red chilies, cinnamon, and cloves. Sauté until aromatic.
  • Add curry leaves and chopped onions. Sauté until golden brown.

Step 2: Cook the Spices

  • Add ginger-garlic paste and sauté until raw smell disappears.
  • Stir in tomato puree and cook until oil separates.
  • Add turmeric, red chili powder, coriander powder, and garam masala. Mix well.

Step 3: Add Tamarind & Simmer

  • Pour in tamarind extract and 2 cups of water. Stir well.
  • Let the kulambu simmer for 10-15 minutes on low heat.

Step 4: Finish & Serve

  • Add coconut paste or coconut milk for a rich texture (optional).
  • Simmer for another 5 minutes until flavors blend well.
