Biryani Recipes 🍛

Ingredients:

For the Rice:

  • 2 cups basmati rice (soaked for 30 minutes)
  • 4 cups water
  • 1 tsp salt
  • 1 tbsp oil or ghee

For the Meat/Vegetables:

  • 500g chicken/mutton/vegetables (cut into pieces)
  • 1/2 cup thick yogurt
  • 1 tbsp lemon juice
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp salt
  • 1 tbsp ginger-garlic paste

Whole Spices:

  • 4 cloves
  • 3 green cardamoms
  • 1 black cardamom
  • 1-inch cinnamon stick
  • 1 star anise
  • 1 tsp cumin seeds
  • 1 mace
  • 2 bay leaves

For the Masala:

  • 2 onions (sliced)
  • 2 tomatoes (chopped)
  • 2 tbsp biryani masala
  • 1 tsp garam masala
  • 1/2 cup chopped coriander & mint leaves
  • 3 tbsp ghee or oil
  • 1/4 cup milk with saffron strands (optional)
  • Salt to taste

Instructions:

Step 1: Marinate the Meat/Vegetables

  • In a bowl, mix chicken/mutton/vegetables with yogurt, lemon juice, turmeric, chili powder, ginger-garlic paste, and salt.
  • Let it marinate for at least 30 minutes (or overnight for better flavor).

Step 2: Cook the Rice

  • Boil water with salt, oil, and whole spices.
  • Add soaked basmati rice and cook until 70% done.
  • Drain and keep aside.

Step 3: Prepare the Masala

  • Heat ghee/oil in a pan and sauté onions until golden brown.
  • Add tomatoes and cook until soft.
  • Add biryani masala, garam masala, and salt.
  • Stir well, then add marinated meat/vegetables and cook until tender.

Step 4: Layering the Biryani

  • In a heavy-bottomed pot, layer half of the cooked rice.
  • Add the prepared masala, then top with remaining rice.
  • Sprinkle saffron milk, chopped coriander, and mint leaves.

Step 5: Dum Cooking

  • Cover the pot with a tight lid and cook on low heat for 20-25 minutes.
  • Let it rest for 10 minutes before opening.

Step 6: Serve & Enjoy
